Spaghetti Squash Goulash

First off, I want to thank R for his creativity on the name of Monday’s meal and the preparation of it! I worked by first 12 hr day nannying and had some emails to work on when I got home, so he got right into the kitchen and cooked this whole thing up for us! It was delicious and there was enough to feed a small country (I’m talking about left overs for daaaaays)

Since I was working on that day, we knew we would want something that was (as usual) relatively easy. And we accomplished that – at least I think we did, but then again…everything looks easier from the couch. If you haven’t tried spaghetti squash yet, I have one question for you – WHY?!?! It’s very versatile, you get a lot for your money and it’s good! Next time you are at the store, humor me and buy one – use this recipe or look up one on pinterest or google. There are only about 1,000,000.

Spaghetti Squash Goulash

  • 1 lb of ground turkey
  • 1 spaghetti squash
  • 1 can tomato sauce
  • 1 can diced tomatoes
  • 1 white onion – diced
  • 2-3 T of italian seasoning

Preheat the oven to 375 degrees. CAREFULLY cut your spaghetti squash in half. (If it is too hard, just throw it in the microwave for a couple of minutes, when you remove it from the microwave, be careful because it will be VERY hot) Scoop out all of the seeds and the “guts” and place cut side up in a 9 X 13 pan. (There are plenty of different instructions on how to cook these, this is just how I do it) Let cook for 45 min – 1 hour, or until you can easily shred the inside flesh with a fork. Meanwhile, brown your turkey. Once that is cooked, add the onions (cook for about 5 minutes), the tomatoes and the seasoning. When spaghetti squash is done, shred in and place it in with the ground turkey mixture. Let everything settle in together for about 10 minutes and ENJOY!

*Another side note: we really liked tomatoes and ground turkey this week… *
